Delicious and healthful, these gluten-free honey garlic chicken bits are ideal for on-the-go lunches or quick weekday dinners thanks to their convenient bite-size. You can eat them alone or with some cauliflower rice or roasted potatoes.

INGREDIENTS:

  • 2 large eggs
  • 1 lb boneless
  • 2 cups almond flour
  • ½ tsp ground black pepper

  • 2 Tbsp honey

METHOD:

Bake at 375 degrees Fahrenheit on a baking sheet lined with parchment paper.

STEP 2:

Add pepper and salt to taste to the chicken breast cubes.

STEP 3:

Coat the chicken cubes in the beaten eggs, roll them in the almond flour, and transfer them to the prepared baking sheet.

STEP 4:

For best results, bake for 13-15 minutes until golden brown and fully cooked.

STEP 5:

After stirring for about 5 minutes, add the cornstarch mixture to the small saucepan containing the garlic, soy sauce, scotch bonnet, honey, water, and garlic.

STEP 6:

Place the chicken pieces in a large basin, pour the sauce over them, and toss gently to coat.

STEP 7:

Before serving, sprinkle some sesame seeds and chives on the honey garlic chicken bits. Add a splash of lime juice towards the end.

Mac and Cheese

In addition to having a luxuriously smooth consistency and a warm and reassuring flavor, macaroni and cheese is an easy dish for parents to prepare, and it never fails to make children happy.

INGREDIENTS:

  • 3/4 lb (340 g) short macaroni
  • 1/4 tsp onion powder
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1/4 tsp garlic powder
  • 1/2 tsp dry mustard
  • 3 cups (300 g) yellow cheddar cheese
  • 1 cup (250 ml) chicken broth
  • 1 can (370 ml) evaporated milk
  • 4 oz (110 g) Velveeta-style cheese
  • 2 cups (200 g) Havarti cheese

METHOD:

STEP 1:

The pasta should be cooked al dente in a large kettle of salted simmering water. Remove the water and set it aside.

STEP 2:

Prepare the broiler by placing the oven rack in the center position. Prepare an 8-cup (2-liter) baking dish or four 2-cup (500-ml) ramekins by buttering them.

STEP 3:

The butter has to be melted in a pan. While stirring constantly, cook for 1 minute after adding the flour and spices. Stirring constantly, bring the evaporated milk and broth to a boil.

STEP 4:

Turn off the heat and stir in the Velveeta-style cheese, the havarti, and the cheddar, each 100 grams. Incorporate all of the ingredients by stirring thoroughly. Toss in the noodles and heat through before serving. Season to taste.

STEP 5:

Place the spoonful in the pan or individual dishes. Cover with the remaining cheese and serve. Put the cheese in the oven and brown it for about 5 minutes.
